Tips that make every recipe turn out better
- Don’t overcrowd. A single layer is 2× crispier than stacked. Cook in batches if needed.
- Shake or flip halfway. This is the single most common mistake.
- Preheat for 3 minutes when the recipe calls for >15 min total cooking — it helps sear edges.
- Oil lightly. 1–2 tsp is usually enough; more smokes.
- Pat proteins dry before seasoning — moisture = no crisp.
